Duc Luong, Ly Luong, Nam Dang , Huy Pham MGM 275 Part 2 Customers : Student, couple, and family. : Basically Japanese foods which are sushi, roll, tempura, noodle, and teriyaki. They have lunch, dinner, and kids menu. Performance that is making food in front of the customers is peculiar business strategy because they entertain customers while waiting their orders. Koto has a free parking and a full bar stocked with fine wines, beers, variety of liquor and sushi. They have so many Japanese paintings on the wall, and a pond full of koi fish and running water. Some customers are able to eat on Japanese old style floor. There are two different types of menus. One is in English, another is in Japanese. Business process: Importing Japanese food ingredients, then the chefs make foods. There are two kinds of chef. Most of them cook in background kitchen, but chefs with special performance skill make in front of the customers. This has advantage because they can eat fresh foods right after chefs cook them.
