Chapter 5 Macromolecule- giant molecules consisting of polymers, which are built from monomers Polymer- a long molecule made of similar building blocks; makes up 3 of 4 organic compounds (Carbs, Proteins, and Nucleic Acids) Monomer- small repeating building blocks that make up polymers Condensation Reaction/Dehydration Reaction- monomers covalently bonded by removing water molecule (—H &—OH are lost) Hydrolysis- disassembly of polymer by adding water Carbohydrates- fuel source and building material that classify as monosaccharide , disaccharides , or polysaccharides a. Monosaccharide- simple sugars that generally follow CH 2 O (i.e. glucose/fructose) b. Disaccharides- consist of two mono. joined by covalent bond called a glycosidic linkage (i.e. maltose/sucrose) c. Polysaccharides- 3+ mono. joined by x glycosidic linkages 1. Starch- storage polysaccharide in plants made of glucose; allows a stockpiling of sugar (energy bank) i. Amylase- simple starch unbranched ii. Amylopectin- complex starch branched (jell-o) 2. Glycogen- storage polysachs in animals similar to amylopectin but extensively branched (found in liver and muscle) 3. Cellulose- structural polysach that composes plant’s cell wall i. Similar to starch only starch has the alpha folding of hydroxyl groups (side to side like cis ) ii. Instead, a beta folding occurs in cellulose (alternate like trans ) preventing digestion for many animals but cows iii. Although it’s indigestible, still important for human diet of fiber (whole grains…”insoluble fiber”)
