Taenia saginata (beef) Nematodes: round worms ( Trichinella , Anisakis, Capillaria, Gnathostoma, Dracunculus, Angiostongylus ) Platyhelminths: Cestodes : tapeworms ( Taenia spp., Diphyllobothrium ) Trematodes/: flatworms ( Flukes , Clonorchis, Trichinella spiralis Smallest nematode parasite Found in mummy from Nile River region (1200 B.C.) Clinical I.D. by Zenkers (1860): saw encapsulated larvae in arm muscle Infected pork: Raw or undercooked Rare in Jews and Muslums due to religious sanctions Also wild animals: Infects multiple hosts Trichinosis Trichinosis: Worlds largest intracellular parasite (1.4-3.2 mm) Zoonosis : humans infected from ingestion of poorly cooked meat: PORK Pigs infected from pork meat in garbage-fed livestock Problem in most carnivores Foods: Less problems in U.S. (Fresh sausage) More in Asian countries (nahm, satay) U.S Outbreak (1990): 70% of S.E. Asian refugees in 6 states infected from pork sausage at wedding in Iowa Trichinosis Epidemiology Mostly asymptomatic (low numbers of larvae) Stages of symptoms: 1. G.I. Symptoms: diarrhea, vomiting 2. Muscle pain: primarily chest pain as parasite imbeds in diaphragm...
