Water Soluble Vitamins Easily absorbed in small intestines Absorbed directly into the blood stream Travel throughout body freely in watery  environment Cooking and washing can leach water  soluble vitamins from food Boiling & Steaming

Water Soluble Vitamins Readily excreted in the urine, relatively  little storage in body Needed in frequent doses (perhaps 1-3  days) because body does not store them Toxicities rare from dietary intake Higher risk with supplementation

Vitamin C Essential, water soluble vitamin “Ascorbic Acid” – meaning no scurvy acid Long history 2/3 sailors in 1500-1700s would die at sea Scurvy Fresh foods used up earlier in trip Long term  develop vitamin C deficiency, scurvy,  death 1600-1700s Navies began adding lemon and lime to  their foods Experiment where sailors were divided into groups and  received various foods/solutions Decline of scurvy in those receiving citrus fruits
