1 HUEC 4011: Medical Nutrition Therapy I Fall 2010 Course Catalog Description : 4011 Medical Nutrition Therapy I (3) F Prereq: Grade of “C” or better in BIOL 2160 or 2153; BIOL 2083 or 4087 or equivalent; HUEC 2019; credit or registration in HUEC 3012, 4010, or consent of instructor. Nutrition assessment and interpretation; drug/nutrient interactions; genetics and inherited diseases; biochemical and physiological changes that occur in dental, gastrointestinal abnormalities, and absorption abnormalities that require clinical diet modification. Course Objectives : At the end of the semester, you should be able to: 1. A. Dietetics students: Describe the role of an RD in the care of patients and how the RD interacts with other health professionals in a clinical nutrition type setting. B. Nutritional Sciences pre-medical students or minors: Describe the role of nutrition in the health and care of patients, and explain how an MD or other health professional would interact professionally with dietetics professionals and how you would provide nutrition information to patients or describe how the information presented in this class provides a basis for graduate education in nutrition or a related field. 2. Assess laboratory values, medications, clinical symptoms, disease states, fluid/acid-base balance, and pathophysiology to distinguish between patients at high and low nutritional risk and develop a plan for all patients. 3. Determine appropriate feeding options (or no feed options) for all patients. 4. Integrate ethics of care, standards of care, and evidenced based practice into the decision making process. 1

5. Explain the relationship between pathophysiology of disease and treatments to nutrition or the patient’s nutritional status to a patient, family member, or to a physician or other health professionals. This will pertain principally to diseases of the digestive tract and ancillary organs this semester, but the objective will continue into HUEC 4014 for other diseases/systems. 6. Demonstrate the ability to write effectively and think critically. 7. Choose and evaluate appropriate reference sources. Use appropriate references and discipline specific citations in your work. If you are in Dietetics, this class provides the following Knowledge Requirements  and Demonstrated Learning Outcomes: 1 KR 2.1. The curriculum must include opportunities to develop a variety of communication skills sufficient for entry into pre-professional practice.
