Getting Gourmet with Peaches This summer it is all about peaches and the inventive ways in which chefs can incorporate them into tasty recipes. Peaches can be dried or canned, made into delicious jams, jellies, and peach preserves, or even used as filling for desserts. However, some may not realize that the peach can also be used as an ingredient in many other dishes, from appetizers to entrees. With all the picnics and family gatherings during the summer it is a great time to show off your gourmet side with a little flair from this year’s amazingly flavorful peach crop. Why not turn a boring chicken salad into something memorable? Try this great recipe for “Peach Chicken Salad” from Chef Priscilla Gilbert of Indian Harbor Beach, Florida. Ingredients 3 medium fresh peaches, peeled and cubed 2 cups cubed cooked chicken breast 1 medium cucumber, seeded and chopped

Unformatted text preview: • 3 tablespoons finely chopped red onion Mint Vinaigrette: • 1/4 cup white wine vinegar • 1 tablespoon lemon juice • 1/3 cup sugar • 1/4 cup minced fresh mint • 1/4 teaspoon salt • 1/8 teaspoon pepper • 4 lettuce leaves Directions 1. In a large bowl, combine the peaches, chicken, cucumber and onion; set aside. 2. In a blender, combine the vinegar, lemon juice, sugar, mint, salt and pepper; cover and process until smooth. 3. Drizzle over chicken mixture; toss to coat. 4. Cover and refrigerate until chilled. 5. Use a slotted spoon to serve on lettuce-lined plates. Optionally you could add in a few more vegetables such as tomatoes or carrots if you like. Another option is to serve the dish on fresh spinach leaves instead of lettuce. If you enjoy cheese, a sprinkling of low-fat feta cheese can add yet another pop of flavor to the dish....
