Beef Cattle (classified by age/gender) Steers (male, castrated while young to gain weight quickly) Bulls (male, uncastrated, used for breeding) Veal (young calf, 3 wk-3 month) Fed milk based/formula diet Restricted movements Free Range veal = less tender Lamb (<14 months old) Mutton (>14 months old, darker meat, strong flavor Pork  young swine 7-12 months old pigs <4 months old hogs >4 months old Muscles composed of individual muscle cells = muscle fibers Fiber surrounded by outer membrane = sarcolemma Fiber filled with cell fluid (sarcoplsm) and bundle of muscle fibrils Shortening creates actinomyosin Connective Tissue (Glue that holds muscles together)
