Show Overhead – If 99.9% is Good Enough, Then… I. Strive for perfection Briefly discuss items on overhead and their importance. Relate that some aspects of restaurant service such as customer satisfaction may not be 99.9% effective but we can only improve by striving for perfection. Other aspects of restaurant service such as food safety must be better than 99.9% effective. II. Evaluations Work performance evaluations are a key management responsibility of those in food service as well as any profession that involves supervising employees. The primary purpose is to give employees input on how to improve their performance in the future. Written evaluations are very often key determining factors in promotions, layoffs, termination and pay raises. In addition to writing, evaluations need to be presented orally to the employee. Most often, performance evaluations are done by assistant managers or other positions often held by recent college graduates. This makes it necessary to be critical, (in regards to strengths and weaknesses), to workers that you may consider to be your friends. Although most companies require
