Citric Acid Production by Fermentation Project Goal: The goal is to design a fermentation process for the production of citric acid for use in beverages and confectionary. The annual production is to be 7,500 metric tons of the acid form of citric acid. Chemical Information: Citric acid [CAS No.: 77-92-9 ], C 6 H 8 O 7 , M r 192.13, is a tricarboxylic acid. Citric acid is a weak organic acid. It is a natural preservative and is also used to add an acidic, or sour, taste to foods and soft drinks. In biochemistry, it is important as an intermediate in the citric acid cycle and therefore occurs in the metabolism of almost all living things. It also serves as an environmentally benign cleaning agent and acts as an antioxidant. Citric acid exists in a variety of fruits and vegetables, most notably citrus fruits. Lemons and limes have particularly high concentrations of the acid; it can comprise as much as 8% of the dry weight of these fruits. Citric acid is shown below. Main Objectives:
