Largely because they are poorly soluble in aqueous solutions. Lipids are used by cells for storing energy, building membranes, signaling within and between cells, sensing the environment, covalently modifying proteins, forming specialized permeability barriers, and protecting cells from highly reactive chemicals. Fatty acids are oxidized in the mitochondria to release energy for cellular functions. They are stored and transported principally as triglycerides . Fatty acids are also precursors of phospholipids, the structural backbone of cellular membranes. Cholestero l, also important in membranes, is a precursor of steroid hormones and other biologically active lipids that function in cell cell signaling.
