Caffeine • We will be isolating caffeine for tea leaves N N N N O O H 3 C CH 3 CH 3 N N N N O O H 3 C CH 3 CH 3 23 caffeine is one of the most import molecules in US culture. Toxic dose is 300 mg, Interestingly is that one No Doz pill is 200 mg average cup of tea may contain 50-80 mg of caffeine

Alkaloids • Caffeine belongs to a group of compound called alkaloids • Major functional groups are nitrogen atoms O HO H H N CH 3 HO morphine N N nicotine H N O HO O capsaicin 24 Plants originally produced these molecules in order to prevent animals from grazing on them. Capsaicin is the spice within pepper seeds, and prevent the seeds of these plants from being eaten and destroyed. Nicotine and morphine are toxic to most animals and prevent grazing. People have found that these properties can be used for a variety of medicinal purposes.

The majority of these are called tannins Tannin is a generic term for hydroxyl containing organic compound. These usually have a bitter taste and are shown here.
