DAY 7 KEY TERMS Albany Beef: Caviar: The salted roe of the Female Sturgeon. Malosool: Little Salt or Lightly salted. Osetra: is the medium size of Caspian sturgeon. Pellicle: shiny, slightly tacky skin that it provides an ideal surface for the smoke flavor to adhere, it helps seal in the remaining moisture through the smoking process, and it prevents the fats in the fish from rising to the surface and spoiling. Smoking: White sturgeon: Native to the west coast, white sturgeon caviar is farmed in California. Raised for about 10 years until large enough so that both the eggs and the meat can be used. Beluga: is the largest type of Caspian sturgeon. Cure: O, OO, OOO: Grades used for color and size. Pajusnay: scientific name for sturgeon. Sevruga: smallest type of Caspian sturgeon.
