Ch. 8: Food and Beverage Issues TERMINOLOGY Foods – products from plants or animals that can be taken into the body for energy and nutrients to sustain life and growth. Nutrition  – the science of foods and nutrients and their actions within the body 6 CLASSES OF NUTRIENTS Carbohydrates – sugar and energy Lipids – fats Minerals – used for regular body functioning Proteins Vitamins Water – 70% of our bodies are comprised of water Your body obtains these nutrients through the digestive process Foods are broken down into compounds that can be absorbed FOOD: A HISTORY 1900 – hamburger on a bun 1924 – pasteurized milk 1924 – first frozen food 1930 – snack foods (twinkie) 1954 – TV dinners 1965 – Microwave Earliest record of chocolate was 1500 years ago in the Central American rain forests o Derived from cacao tree TODAY’S CONSUMPTION BEHAVIOR Consumer choices are determined by: o Tastes and preferences o Habit and convenience o Culture, emotions, and values o Cost o Nutrition, health benefits, and body image o Innovation and marketing FOOD AND BEVERAGE CONSUMPTION Spending on food: indication on how wealthy our economy is o Consumer spending on food dropped 10% between 1990 and

2000 Average Annual Expenditure on Food (in and out of the house in 2007) o $5,781 per consumer unit (2.5 persons) o $2,312 per person/per year o $44 per week/per person o This falls between low-cost and moderate-cost food plan according to USDA USDA Food plan o The USDA Food Plan serves as national standard for nutritious diet at low cost. It represents set of “market baskets” of food that people of specific age and gender could consume at home to maintain a healthful diet that meets current dietary standards, taking into acct food consumption patterns of US households Low-income families spend higher proportion on food than high-income families o Rising food prices and sales taxes on food have a greater impact on low-income families than high-income families o 2005 Census showed almost 16 mil Americans living in “deep or severe poverty” o Percentage of the poor living in severe poverty reached a 32- year high POVERTY Causes of Poverty: o Lack of education o Lack of employment o Childbirth factors, such as the age at which you have children o Drug addictions o Accumulation of debt o Parents socioeconomic status o Divorce o Gender (women can become pregnant early or lose money in divorce bc they are out of the workforce and may have a lower long-term income) Severe poverty is defined as: ½ the federal poverty line OR Annual income < $10,000 for family of 4 and < $5,000 for individual With food stamps, tax credits, and food and clothing banks, the extremely poor can survive—but not more than that America ranks at or near the bottom of 31 industrial nations for alleviating poverty and childhood poverty, according to the
