Unformatted text preview: Lecture 5 Distilled Beverages - Heat to remove water and leave alcohol- Vapour gets catched and drained into liquid form leaving high alcohol content (rectification)- Alchemists were the first trying to turn base metals into gold- Largely confined to monasteries, then to doctors for medical properties- First product distilled was wine because it was available and its association with monasteries- The first distilled liquids were given names associated with their health properties or heat- Brandy is distilled wine (called aqua vitae, aqua ardens) hott waters- Northern part of Europe (green based) made whiskey, vodka and gin. These spirits helped give warmth to the cold weather- Brandy was known to help cure many medical ailments (many had to do with aging)- ABV alcohol by volume controlled by tight regulation- Charente made cheap wine that was perfect for distilling and had lots of wood around for burning- Cognac is an appalation that has a quality and price much higher than brandy by the...
