Be familiar with the deficiencies associated with the major and trace minerals Be familiar with calcium: functions, regulation of calcium balance, dietary sources and bioavailability Know the major dietary sources of sodium and iron. Know the factors that affect iron absorption (increase and decrease), the difference between heme and non-heme iron regarding absorption, and the effects of iron deficiency Healthy Weight/Fad Diets I and II Know the health risks of overweight/obesity Be familiar with the different types of body composition assessments discussed in class Know the healthy cut-offs for waist circumference and BMI Know how to calculate BMI Know the hormones that affect hunger and satiety and the “stop and go” signals for eating discussed in class Be familiar with the common strategies for weight loss and the healthy ways to lose weight Be familiar with the 3 different components of energy output (BMR, voluntary activities, thermic affect) and what factors affect each one. Nutrient/Drug Interactions Know the nutritional effects involved in drug absorption, metabolism, and excretion Know the role of grapefruit in drug metabolism Know the factors associated with caffeine sensitivity Eating Disorders Know the characteristics and signs and symptoms of each eating disorder discussed in class Know the general contributing factors/ causes of eating disorders Diet and Health I and II
