DISCUSSION QUESTIONS: 1. Describe the difference between a phase transition and a glass transition. Phase transition : the transition from solid to fluid and back.  Important in: evaporation, distillation, and dehydration. Takes place isothermally  @ the phase transition temperature by release or absorption of latent heat Changes in state… can get quality degradation because of molecular motion.  Glass Transition:  takes place w/out the release or absorption of heat. Involves the  transition of a food to an amorphous glass state @ its glass transition temp.  Dependent on the temp of food, time, and moisture content.  Temp Range: -40  … NO molecular motion. 2. What is a thixotropic fluid? Give an example. What is unique about these foods? Thixotropic Fluid- the structure breaks down and viscosity decreases w/  continued shear stress.  Becomes less viscous when stirred. Ex: Creams, paint, paint thinner, egg
