Cooking Tamales 2 One of my favorite Mexican dishes is tamales, even though the preparation takes time. I am a huge fan of most Mexican dishes such as tacos, enchiladas, and fajitas. The preparation of tamales can be a long process, but the outcome is well worth the effort. I suggest you have a helping hand in the kitchen. You can even turn this into a family dinner night and let the kids help. With a little bit of practice and a positive attitude, you will be preparing a mouth watering south of the border meal for friends and family. The first step is to make sure you have all the needed ingredients. Get a 7lb pork shoulder roast and trim as much of the exterior fat off as possible. 1 whole chicken with the giblets removed from the cavity. 1-2 packages of real corn husks make sure it does not have any black mold on them. 2 ½ cups of corn oil and 3/8 garlic powder making sure these two items are fresh. 5/8 cups of chili powder buying the best will result in better tamale. Fresh ground spices are always best so get 3 tbsp of ground cumin, 1 tbsp whole cumin seeds, 3 tbsp paprika, 5 tbsp salt and 1 tbsp ground pepper. Remember the fresher the spices the better the outcome of the tamales
