HB 265 March 1, 2011 “ A self-service buffet served to 855 people at a country club made 67 people sick. Salmonella spp. caused the outbreak. Health officials traced the pathogen to turkey, stuffing, and gravy served at the buffet. - Officials learned that the turkey had been cooked the right way but was held for five hours at room temperature after cooking.” The key to serving safe food is to prevent time- temperature abuse and cross-contamination.
