Welcome to this module entitled Food & Beverage Development. This is a very exciting and interesting module. We shall be exploring the various issues surrounding F & B Development and its significance in terms of culture, lifestyle, marketing, consumer behaviour and anthropology. We shall use many examples and theories from hospitality literature and practical (real life) examples. We shall, to a certain extent, use some tourism literature and practical examples. Throughout the module you will be directed to group discussion in the classroom. You ARE expected to contribute your own thoughts and research. At this stage of your studies you are also expected to think creatively and ‘outside the box’ for yourselves. You are actively encouraged to demonstrate your capabilities of applying your own knowledge and evidence of research by creating your own topics of discussion. This will demonstrate to your peers and tutor evidence of applied thought and critical analysis based upon your own knowledge and reading. In each session you will be presented with ideas for discussion along with reading material, and directed to videos and podcasts. Many of these items will be used as a method to stimulate your thinking and engagement of discussion. Some will be for your reference. It is suggested that you also find your own source materials and present them to your peers and tutor. Make full use of the facilities available to you in the Learning Centre and the online facilities of the intranet i.e. academic journals via the Athens login. There will be an assignment due with this module, details of which follow below. At various stages throughout the module you will be expected to submit to your tutor your work/assignment in draft form for review and feedback. You should make full use of this facility in order that you may attain the best grade possible for your work. If you are in any doubt or do not understand something please ask. If you require further clarification then that’s OK, just don’t be afraid to ask. The aims of this handbook are: To facilitate and maximise learning through the provision of information on the module such as outcomes, content, scheme of work, assessment, recommended reading and tutorial tasks; To guide you through the module and provide for a structured approach to learning. Please ensure that you bring this handbook with you to all of your lectures and seminars. It is strongly recommended that you use this handbook to as a foundation for the collation of your notes and handouts received during the lecture and seminar sessions.
