Collected then split open. Allowed to ferment. Fermentation process: Natural sugars to alcohol t acetic acid then ester. After fermentation, allowed to dry and then roast. Roasting process is known as the maillard reaction. Sugar protein reaction to give flavor. Remove shells, and left with nibs. Then ground and make chocolate liquor (no alcohol). o Spanish chocolate drink was bitter with high fat content. Heat, spices, constantly stir, urgh… o Conrad Van Houten 1828, used cocoa butter/fat to separate from cocoa cakes. Create more solid cakes. Treats chocolate with a base (Dutch Process!) – this cuts down on the bitter taste. TEST QUESTION! Butter is used in lipstick (melts at body temperature).
