2 Lactic acid Fermentation During glycolysis NADH produced Need to reoxidize NADH to sustain glycolysis or else energy metabolism halts One example: during a burst of intense muscle activity (e.g., sprint) Anaerobic conditions due to O 2 debt Lactic acid fermentation occurs (pyruvate is converted to lactate) NAD + recycled for sustained glycolysis Energy output poor compared to respiration glyceraldehyde 3-phosphate dehydrogenase Ethanolic fermentation Another example: during fermentation of beer and bread by yeast Anaerobic conditions lead to a second type of fermentation “Ethanolic fermentation”
