Aceituna Café - 2 Aceituna Café opened its doors in September 2004 near Kendall Square in Cambridge. They offer Mediterranean and Lebanese cuisine for breakfast and lunch in a trendy and clean environment. 1. When and why did you start this business? o I started my business in august 8 2004 because we saw a franchise in Canada Montreal that didn’t exist here so we want it to bring over here to Massachusetts, the franchise there is called “Amir” but not same elaborate as we have it here. 2. How did you evaluated the opportunity to know that it’s going to be successful?( is there any got a feeling role, …) o yes there is a got a feeling at the beginning, and a new trend in the world is the healthy food, the Mediterranean food is now on the line like sushi was 10 years ago and look how many sushi restaurants we have and now a lot of nutritionist are talking about the Mediterranean diet and with this trend we found a neech so that’s why we bring it here, we do everything fresh tot fulfill the neech of the market. 3. What were your difficulties and problems at the beginning? And how did you solve them?

Aceituna Café - 3 o To make the brand known, in this area, 90% of my clients are American not from the Mediterranean area they don’t even know the food, so that was a difficulty to try the food for the first time, and we exist in a business district and lunch is our main business, we tried to distribute a flyers but it s very tough because we are surrounded by a pharmaceutical area where you are not allowed to put any flyers
