DIET AND CANCER My Prediction Everyone in this class will eventually die The Facts of Death Leading causes of death in the United States by age Age Cause of Death < 1 Birth defects 1-34 Unintentional injury/accidents 35-44 Cancer 45-54 Cancer 55-67 Cancer 67+ Heart disease When we look at the number of deaths caused by cancer it seems that  they are increasing over what they were when we consumed a "better"  diet.  If we adjust the death rate for the fact that people are living much  longer than they used to we see that the age adjusted death rate from  cancer has changed very little in the past 40 years.  In fact it has recently  started to decline.   Much of this can probably be attributed  to the  number of people who have quit smoking.  If we look at death rates world  wide where life expectancy is not as great as in the United States we  see: Causes of Death  Worldwide Circulatory diseases 29% Cancer 12.6% Respiratory diseases 7.2% 6.9% Cancer is further down on the list. It will only increase when things like infectious diseases are better controlled and treated. In the United States cancer is the second leading cause of death following heart disease. You should note that from the age of 1 to about 35 accidents are the leading cause of death in the US. From 35 to about 67 it is cancer and then heart disease emerges as the leading cause of death. Diet and Cancer What is cancer? How does it develop? Can it be treated and/or prevented? Cancer Stats 1 in 4 persons will develop cancer 1.4 million new cases / year in US 500,000 deaths $107 billion dollars What is cancer? Key Point: Cancer is basically uncontrolled cell growth Cancer Family of over 100 diseases Second leading cause of death in US Multistage process Mutations to important genes Characteristics of Cancer Cells Uncontrolled growth Loss of contact inhibition Loss of differentiation Genetic change Most cells will only divide a limited number of times. After that number is reached they will die. Cancer cells can continue to divide forever. They are said

to be immortalized. The problem is that with every division there is a chance for a mistake (mutation) to be made. If a cell can divide forever it will almost certainly accumulate a number of errors in its genetic material. Most cells will stop dividing when they come into contact with other cells. They
