FDSCTE 201 Carbohydrates 1. What is a carbohydrate? How many calories does it provide per gram? Name the essential carbohydrates? Carbohydrates are called carbohydrates because they are essentially hydrates of carbon (they are composed of carbon and water and have a composition of (CH2O)n. 1 gram Carbohydrates= 4 kcal. The major nutritional role of carbohydrates is to provide energy. 2. What is the basic subunit of carbohydrates Monosaccharides Dosaccharides Oligosaccharides Polysaccharides: Straches, Cellulose, Gums 3. Name three hexoses and 2 pentoses Hexoses: 6 carbon sugars - Glucose - Fructose - Galactose Pentoses: 5 carbon sugars - Ribose - Deoxyribose 4. What two sugars make up sucrose? Lactose?Maltose? Sucrose= Glucose + Fructose Lactose= Glucose + Galactose Maltose= Glucose + Glucose 5. How does lactose intolerance occur? Why are some people more susceptible than others? Lactose intolerance is caused by a lack of enzyme that hydrolyzes lactose 6. What is the role of insulin? Describe the differences between type 1 and type 2 diabetes
