During the 1980’s and 90’s stores opened in malls, airports, shopping centers . In 1993 , Au Bon Pain purchased St . Louis Bread Company, a chain of 20 bakery-cafes . In 1999, it sold its Au Bon Pain Division and changed its name to Panera Bread Company . The Company and its subsidiaries, is a national bakery-cafe concept with Company- owned and franchise-operated bakery-cafe locations in 40 states and in Ontario, Canada . The company operates as three business segments: Company bakery-cafe operations, franchise operations, and fresh dough operations . Panera Bread Company owns and franchises 1399 bakery-cafes as of June 29, 2010 under the Panera Bread , Saint Louis Bread Co . .
