Industrial Forecasting 2 Abstract Although soy has been used in packaged food and beverage products for decades, it continues to make new inroads and increase its appeal among U.S. consumers, especially those interested in health and nutrition. Particularly among natural food shoppers, there is a growing consensus that plant-based foods like soy, as opposed to animal-based foods, deliver unique, healthful benefits. At the same time, soy continues to “mainstream” into regular supermarkets and new product categories, from smoothies and energy drinks to cereals and baked goods. Helping to drive these trends, marketers are beginning to combine soy ingredients with other healthful ingredients, such as omega-3s and “super fruits,” to create unique products that are even more nutritious. Moreover, as consumer awareness of the many health benefits of soy grows—especially the FDA-approved “heart-healthy” attributes—soy’s use as an ingredient and attractiveness as a meal and snack choice can only increase.

Industrial Forecasting 3 Soy products have staying power due to an increase in health trends Thanks to consumer’s obsession with personal health, a change in lifestyle, the increase of food intolerance, allergies and being environmental friendly, the use of soy products is on the rise. According to Nutraingredients.com soy milk is better than cow’s milk because it helps to provide a higher concentration of fiber, protein, minerals while low in fat and free of cholesterol. Research also suggested that consumers that make soy products a regular part of their diets have a greater chance of reducing many diseases; such as “breast cancer, colon disorders, and colon cancer, osteoporosis, and heart problems” (Mercer, 2005). Soy products are good for you and the environment One of the leading soy milk companies in the United States, Silk Soymilk is setting the pace for others to follow. Silk Soymilk is helping the environment by purchasing “wind power”, an electricity based product that will allow the company to offset their electricity usage to make their products.
