Basic Terminology Fermentation : the process whereby yeasts convert the natural sugar in the grapes into alcohol and carbon dioxide. Pulp : the soft, juicy center of the grape Acid : natural component responsible for zesty, refreshing qualities. It also helps to age the wine. Tannin : a compound derived from the skins, seeds, and stems of the grapes, as well as from the barrels.
