Vista Room Special Project Guidelines In the beginning of the semester, the following is required: 1. A letter from your current or previous employer stating you have 2 years restaurant  service experience AND 6 months fine dining experience. Give this letter to Sarah  Josef in the Miele Lab  BH406 NO LATER THAN 2/11. 2. Set up an appointment with Sarah Josef during her office hours to discuss the topic  of your special project. 3. Once a topic has been established, write out an outline of how you will proceed with  your special project. Give this outline to Sarah Josef. 4. Once you begin your actual project, keep a log of the hours you spend per week and  what you did during those hours. During the semester, the following is required:
