Write a 200- to 300-word response answering the following questions: o What is the function of fiber in the body? Fiber is "the endogenous components of plant materials in the diet which are resistant to digestion by enzymes produced by humans" (Van Horn, 1997). Fiber has cholesterol- lowering benefits, and is important for gastrointestinal health. o What are some examples of food sources of dietary fiber? Rye, wheat, rice, vegetables, and most grains are mainly composed of insoluble fiber. Oats, beans, dried peas, and legumes are sources of soluble fiber. o What is the difference between soluble and insoluble fiber? Soluble fiber delays the time it takes to travel through the intestine and insoluble fiber speeds up the time it takes to travel through the intestines. Soluble fiber and decreases the level of cholesterol in the blood, and insoluble fiber has no effect on serum cholesterol (unknown, 2002). o What are the fiber recommendations for children versus adults, according to the

An adult on a 1500 calorie diet should consume about 25 grams of fiber a day. More fiber than 25 grams may not be tolerated by the body. o What did you learn about fiber that you were not aware of prior to reading this information? I knew that fiber played a role in our gastrointestinal health, but never knew that it lowered our LDL cholesterol.
