Unit Cost Look at the Ben E Keith invoice and calculate/answer the following: How many gallons of gelato vanilla bean come in 1 case? What is the cost per ounce of the vanilla bean gelato (128 oz = 1 gal) How many pounds of butter are in one case of butter? How much does one pound of butter cost? How many pounds of pancetta loaf were purchased? What is the price per pound of the pancetta? There are 5 / 13.5 pound and up ribeyes in a case. How many pounds of ribeye were purchased? What was the total cost of the ribeyes? What is the meat to fat ratio of the beef ground? What is the price per pound? Assume the applewood bacon is 14/16. What is the cost range of one slice of bacon?
