Text: Procurement of Hospitality Resources; Jack D. Ninemeier and David K. Hayes Course Description: Through instruction, discussion and hands-on experience, the student is given the opportunity to understand theory, processes and complexities of procurement; including food, supplies, FF&E, and services utilized in the hospitality and food service industries. Emphasis is given to management of the purchasing process, communication, specifications, and technology applications. Course Objectives: Upon completion of the course, the student should be able to: 1. Explain the importance of procurement in the hospitality industry. 2.
