You are asked to determine the best cleaning process for a continuous mixing system that combines fruit flavoring to water to make fruit drinks. The current continuous mixing system was adapted from large batch mixer several years ago (your predecessor’s work). Today, this system is used to make multiple products (different flavors) and has to be cleaned out when switching between products. The current change over process has 3 steps, 1) stop inlet flows and drain the mixer, which allows collection of saleable product; 2) fill mixer with water, stir for 35 minutes and drain, which produces waste water; 3) re- fill mixer with water then start the inlet of new product/outlet flows (step change), which continues to generate waste water until the outlet reaches the full new product concentration, at which time the new product can start being collected.
