Lipids . . . are a naturally occurring family of nonpolar biomolecules. are soluble in nonpolar solvents. are insoluble in water (hydrophobic). The name is derived from the Greek word lipos which means fat. Classes of lipids include fats and oils, waxes, glycerophospholipids and steroids.

Fatty Acids . . . are the simplest lipids. are often the components of more complex lipids. are long-chained carboxylic acids found in fats. Can be divided into three groups: Saturated fatty acids Monounsaturated fatty acids Polyunsaturated fatty acids

Saturated Fatty Acids . . . contain only single bonds between carbons. are found in coconut oil, nutmeg oil, palm oil, have molecules that fit closely together in a regular pattern allowing strong attractions between the carbon chains. have higher melting points and are usually solids at room temperature.

Monounsaturated Fatty Acids . . . contain one double bond between carbons. are found in butter, olive oil and corn oil. have a bend in the carbon chain due to the double bond. Therefore have an irregular shape and fewer interactions occur between the carbon chains. have lower melting points and are usually liquid oils at room temperature.
