NST 10 Fall 2011 S.E. Fleming, Professor Study Materials. Summary from Presentation Slides: Triglyceride is the major form of lipid (fat) in our diet. Triglycerides can vary widely in which fatty acids they contain. Fatty acids vary in numbers of carbon atoms, whether they contain double bonds or not (saturated versus unsaturated) and the number of double bonds (mono- versus poly-unsaturated). The chemistry of the lipid determines its function in the body and risk of disease. Other lipids in the body include phospholipids and sterols, including cholesterol. During digestion, lipids are incorporated into micelles and enzymatically hydrolyzed into smaller molecules that can be absorbed into mucosal cells and incorporated into lipoprotein particles called chylomicrons. Chylomicrons transport the dietary lipid into lymphatic vessels, then into the blood stream. When they reach adipose tissue, most of their triglyceride is removed and is stored there if not needed for energy.
