Definition of Terms: Our lab consisted of experimenting with enzymes and they’re capability of removing stains, breaking down applesauce, and tenderizing meat. 1.Enzymes are proteins that expedite biological reactions. Enzymes do this by changing shape once a substrate has attached itself, this puts pressure on the binding of the substrate which forces a reaction. (Underwood, p. 3) 2. A catalyst is the term used to describe something that accelerates a process. An enzyme is considered a catalyst because it accelerates the biological process without hindering it’s own shape. (Underwood, p. 2) Hypothesis: The applesauce mixed with the pectinase will yield more fluid because the enzymes will attack the oxygen linkage, breaking down the substance faster than water. The meat tenderizer will digest the most protein because it has been formulated specifically for that purpose, where as acidic tenderizers like orange and pineapple juice are used primarily for individual consumption. Materials and Methods: Our first experiment was to test our first hypothesis, which was “the applesauce mixed with pectinase will yield more fluid because the enzymes will attack the oxygen linkage, breaking down the substance faster than water.” To test this, we began by measuring 25 grams of applesauce by scooping it into cups and using a scale to know how much to add, or take away. Once we had two cups of 25 grams of applesauce we labeled one with the letter “P” to indicate which one had the pectinase. In
