More people in the USA are eating plant-based diets.
There are several types of vegetarian diets.
Lacto-vegetarian - consumes milk and dairy products plus plant foods.
Lacto-ovo-vegetarian -eats eggs, milk, dairy products +plant foods.
Pescovegetarian - eats fish, plant foods but no red meat.
Pollovegetarian - eats poultry, plant food but no red meat.
True vegetarian - eats only foods of plant origin. They are sometimes called strict
vegetarians or vegans. The word vegan sometimes denotes that this group of people
share a philosophy of life .
"New" vegetarians differ in that very few adults in such families were raised as
vegetarians and they may not be aware of the correct combinations of food necessary to
supply all needed nutrients.
Fruitarian - eats only fruit, honey and nuts.
Zen Macrobiotic diet
Macrobiotic diets (not connected to Zen Buddhism) were promoted in the United States
by George Ohsawa (1893-1966). He proposed 10 diets of increasing restriction and "value" in
achieving a state of well-being (nirvana). The most restrictive diet (plus 7) is supposed to be the
ideal diet and consists entirely of cereals (mostly rice). Liquids are to be taken sparingly and
foods should be chewed 100 (and preferably 200) times. Foods are separated into yin and yang
groupings (weak and strong). Most fruits are forbidden because they are too yin, while all red
meat is too yang. The macrobiotic diet has been promoted by Michio Kushi and the East West
Foundation. The Am. Med Assoc and Am. Acad of Pediatrics have condemned the macrobiotic
diets for their nutritional inadequacies. Strict adherence to these diets could result in
hypoproteinemia, hypocalcemia, emaciation, loss of kidney function due to reduced fluid intake,
malnutrition and even death
