Dr. Lee, Fall 2010 Test 4 Food Environments Know the factors contributing to the “obesogenic environment” · Obesogenic– a recently coined term meaning the environment that sets people up for weight gain. FACTORS- - Increase in the use of fats - High number and variety or inexpensive, high calorie food items - Physical inactivity - Use of cars (instead of walking) Know the characteristics and health affects of food deserts · Definition of food deserts: areas with lack of access to food stores, either due to lack of availability or lack of accessibility · Characteristics- o Higher individual and family poverty rates o Lower median family incomes o Greater percentages of residents living in rural areas o Higher numbers of small grocers and convenience stores per capita * Health Effects - food deserts may restrict availability and affordability of foods that may affect dietary intake and health - people living in these food deserts are less likely to get their recommended daily value of many nutrients/healthy food Know how policy, food systems and public health interact with each other - Government policies affect what crops are grown on American farmland - farmers must create economically stable food - farmers must maintain a low price/max production of certain commodity crops -Food products have provided low cost, convenient, high energy density, and appealing tasty foods - Americans are eating more food, most of which is unhealthy and having more health problems -Industrialized agriculture has posed a critical risk to agro-ecosystem health Know what food processing is, why we do it, and what happens to the food · 1) Many foods are highly-processed. · 2) Food that undergoes canning, freezing, or dehydrating techniques to extend shelf-life or shorten preparation time · 3) To make processed food tasty with a good mouth-feel, producers add extra fat, sweeteners, and flavors. 4) Energy density is increased in food supply and affects taste, food intake, and short-term
