Food and Beverage: The Clarion Hotel in Northampton has four sources of food and beverage revenue: Morgan’s restaurant, the lounge/bar, the poolside bar, and vending machines. As is true for most hotels the food and beverage division is a revenue center, and is a key part of the profits for this hotel. The highest grossing food and beverage outlet is Morgan’s restaurant located in the lobby of the hotel. This prime location ensures that all guests walk past the restaurant when they enter and exit the hotel. Every time they do, they pass people eating, they smell the food, and they are reminded that the restaurant is there. This advertises the restaurant every time a guest enters or leaves the hotel. It is a small restaurant that sits about 30 guests. Room service is available, and provides guests with another venue through which to try the restaurant’s cuisine. Free coffee is available daily as well, which works as an incentive to get guests through the restaurant’s door, so they will be more likely to be enticed to order food as well.
