I make my own. . and I once thought, I could never do this. But its easy. . even my 8 year old helps me make them. Too easy. .! Here's the recipe. .and I'll explain . NOODLES 3/4 Cups Flour (see below) 1 egg ~3/4 tsp salt (or to taste) ~1 tbsp water (depending on flour and humidity) Mix the salt into the flour, and then beat the egg a bit with a fork, toss it and the water into the flour,, mix a bit with your hands till a ball forms, then plop it out onto a lightly floured counter and knead this a bit. . (you dont have to be a professional) just knead by pushing and folding over, pushing and folding over till it gets somewhat stretchy a bit. . like about 5 min of this.

Unformatted text preview: . then just let the dough rest a few min to allow the fiber inside the flour to do its thing. . then after 15 min or so. . roll out the dough to like a long rectangle, very thinly. . then flour this sheet well. . fold over itself several times till you get a little parcel about the size of 4x4 or so. .. then taking a good knife. . cut slices of noodles off one end (thin little slices the size of a noodle) just keep slicing, you will know have a huge stack of noodles. . fluff them up with your fingers, not stretching them too much. .. then plop them into stew, water, broth, whatever liquid you are using, cook about 5 min. . and enjoy. .....
