Stephanie Baggio Immersion Week Reflection Paper [email protected] From edible flowers to Easter-colored chicken eggs, urban farming within the city of Chicago involves many opportunities. One of the most interesting things I observed was that one doesn’t have to have a spacious backyard to grow a garden. Being in an urban area where backyards are usually either nonexistent or a patio, gardeners have learned to adjust to this environment by using raised plots that can be placed on a back porch, making gardening accessible to communities. In the city of Chicago, there are numerous amounts of ways to be a part of this farming movement at every level. Farmer’s markets, community gardens, neighborhood gardens, and rooftop gardens are just some of the ways for anyone to get involved. The places I visited during Immersion Week exemplified the simplicity of the locations the gardens were established. From unused parking lots to a torn down apartment buildings, these undeveloped spots were transformed into incredible, successful gardens with raised plots and homemade compost. An extreme case of efficiently using any given space is the Growing Power garden in Grant Park. To the naked eye, it appeared to be just a park with a few bushes, but in reality, it was a thriving vegetable garden. Using undeveloped land in the city to begin gardens can be established in several ways, such as community gardens, neighborhood gardens, and rooftop gardens. The idea is to utilize the minimal space to grow the maximum amount of crops. Planting seeds that grow all year round as well as planting seasonal crops are two ways of efficient planting. Neighborhood gardens serve as interactive classrooms teaching children how to garden while integrating healthy food into their diet. I think that one of the biggest obstacles in starting a community garden, aside from financial funding, is that people are uneducated and are not exposed to healthy food, often resulting in food deserts where there will be several fast food restaurants before a grocery store is
