Chapter 2: Designing a Healthful Diet Many factors contribute to uncertainty about the influence of nutrition on human health First – nutrition is a relatively young science Second – popular media typically report the results of only selected studies, usually the most recent Third – there is no one right way to eat that is healthful and acceptable for everyone What is a Healthful Diet? Provides the proper combination of energy and nutrients. Has four characteristics: Adequate – provides enough of the energy, nutrients, and fiber to maintain a person’s health Moderate – eating the right amounts of foods to maintain a healthy weight and to optimize the body’s metabolic processes Balanced – contains the combinations of foods that provide the proper balance of nutrients Varied – refers to eating a lot of different foods each day What Tools Can Help Me Design a Healthful Diet? Food Labels US Food and Drug Administration (FDA) established an initial set of labeling regulations Nutrition Labeling and Education Act (1990) Specifies which foods require a food label, provides detailed descriptions of the information that must be included on the food label, and describes the companies and food products that are exempt from publishing complete nutrition info on food labels. 5 Components Must Be Included on Food Labels A statement of identity – common name Net Contents of package – quantity Ingredient List Name and Address of the food manufacturer, packer, or distributor
