Lecture 14: Discovery of Vitamins Fat Soluble Vitamins 3/15/10 History C. Eijkman: showed that polished rice caused beriberi in chickens & non-polished (brown) rice (a micronutrient) cured the disease F.G. Hopkins: showed that tiny amounts of certain factors from milk were necessary for growth of rats on purified diet Casimir Funk: summarized requirement for “vital amines” in diet (in addition to CHO, proteins, fat) postulated “ vital amine ” theory of disease: eg: certain foods could cure diseases 4 specific vital amines (vitamines) would cure: pellagra, beriberi, scurvy, rickets E.V. McCollum: discovered fat-soluble substance A → vital amine A → vitamin A Sir Edward Mellanby: Rickets—in dogs fed on oatmeal diet and kept out of sun. Cured rickets with cod liver oil discovered anti-rachitic substance ( Vitamin D ) Digestion of Fat Soluble Vitamins they are digested and absorbed like fat (requires bile acid, digestive enzymes) small intestine absorbs fat-soluble vitamins similar to fat absorption gut bacteria produce little vitamin K (still needed in diet)
