Preparation time: 40 minutes Cost/serving: $0.97 Yield: 9 servings Inspired by Heather Donovan’s Mother Ingredients 3 sweet potatoes 32 fl oz chicken broth 3 cloves garlic (roasted) 1 tsp honey 2 Tbsp olive oil ¼ tsp salt ¼ tsp pepper Preparation 1. Peel and chop the sweet potatoes into 1-inch chunks 2. Add to pan along with chicken broth 3. Bring to boil 4. Let simmer for about 30 minutes (until soft) 5. Sweet potatoes are a good source of Vitamin A (eye clarity and function), Vitamin B3 (improves circulation and lowers cholesterol in the blood), and Iron (regulation of cell growth). When preparing, be sure to chop the potatoes so the chunks are similar sizes; if some are large and some are small, they will be done cooking at different times.
