Unformatted text preview: Chapter 7 Milk • The average American consumes 375 pounds of dairy products per year • Approximately 1 of every 7 dollars spent on groceries in the U.S. goes to the purchase of dairy products • Milk is sterile as it comes out of the utter. • When given to calves is a great food rich in nutrients. • Cow's milk is significantly higher in protein (15%), calcium, and phosphorus to support the calf's faster growth rate. Human milk is 5 to 7% protein. • Cow's milk has 400% more calcium the human milk. • Cow's milk is very low in iron. It contains less than 1 milligram of iron per quart. For a 1 year old to achieve their iron requirements for a day, they would have to drink 31 quarts of milk. • Human milk has 6 to 10 times the essential fatty acids than cow's milk, especially linoleic acid. • Calves require 45 days to double their birth weight while humans take 180 days. • Casein or sodium caseinate is the principle protein of cow's milk. Cow's milk has 20 times as much casein as human milk, which makes it very difficult for humans to assimilate. • Many adults (20-40% Caucasians and up to 90% of Africans and Asians) are lactose intolerant due to the fact that humans gradually lose the lactase activity in their small intestines between the ages of 1 and 41/2 years of age. • Milk contains colostrum which has antibodies against diseases of cows (humans do not get these diseases). • Milk is a great growth medium for bacteria, fungus, and virus because it is such a great nutrient source. • Milk is easily contaminated with: Typhoid, Hepatitis, Strep, TB, Bruciolsus, Q fever, • Salmonella, Diphtheria, Staphylococcus all of which can be spread through human Consumption of milk. • Usage of cow's milk can lead to allergies, heart disease, colic, cramps, sinusitis, skin rashes, acne, gastrointestinal bleeding, diarrhea, iron deficiency anemia, arthritis, ear infections, asthma, diabetes, auto immune diseases such as: MS, cataracts, ovarian cancer, and osteoporosis. • Dairy products are severe mucus producers and place untold strain on respiratory, digestive and immune systems • Methods of contamination are: 1. Cow it 2. Individual milking (or machinery) 3. Storage container 4. Transportation container 5.
