A company like Amgen modifies the DNA of an organism, like yeast, to produce in large amounts a desired protein, like erythropoietin, which stimulates red blood cell production in humans. The protein, which is a polymer of amino acids, can mis-fold in certain organisms and this is one of the major challenges that face biomolecular engineers in the use and manipulation of living organisms to produce a desired protein with a specific conformation. The same protein, produced in different organisms and having the same amino acid sequence can fold differently.
