Cheá phaåm phaûi chöùa töø 40,0% ñeán 55,0% monoacylglycerol, 30,0% ñeán 45,0% diacylglycerol vaø ñeán 5 - 15% triacylglycerol, thu ñöôïc baèng caùch phaân giaûi glycerol töøng phaàn daàu thöïc vaät chöùa chuû yeáu triacylglycerol cuûa acid palmitic hoaëc acid stearic, hay baèng caùch ester hoùa glycerol vôùi acid stearic 50 (loaïi I), acid stearic 70 (loaïi II) hoaëc acid stearic 95 (loaïi III). Caùc acid beùo coù theå coù nguoàn goác töø ñoäng vaät hoaëc thöïc vaät. Tính chaát Khoái saùp cöùng hoaëc boät, vaûy nhôøn, maøu traéng hoaëc gaàn nhö traéng. Thöïc teá khoâng tan trong nöôùc, tan trong ethanol 96% ôû 60 o C. Ñònh tính A. Nhieät ñoä noùng chaûy 54 – 64 o C (Phuï luïc 6.7) Cho cheá phaåm vaøo oáng mao quaûn vaø ñaët trong bình kín trong voøng 24 giôø. B. Phöông phaùp saéc kyù lôùp moûng (Phuï luïc 5.4) Baûn moûng: Silica gel (TT). Dung moâi khai trieån: Hexan - ether (30 : 70) Dung dòch thöû: Hoøa tan 1,0 g cheá phaåm trong methylen clorid (TT) baèng caùch ñun nheï vaø pha loaõng ñeán 20 ml vôùi cuøng dung moâi.
