What is it? 2.) What is it’s purpose in the kitchen? Grills/Griddles • Thin solid surface for cooking flat items: hamburger patties, pancakes, eggs, other meats, poultry… • Large grills have several temperature controls that can regulate different sections to cook different food items • Some have ridges for meat cooking Broilers • High temperature units for broiling or browning foods quickly • 600 ºF to 2000 ºF • Broilers always need to be pre-heated • Heat source from overhead or from below • Salamander primarily used for top browning foods, but also can be used for individual therapeutic diet orders. • Also used for plate warming Tilting Skillet • A large frying pan • It can be tilted to pour out food- “trunnion-mounted” • Versatile • Perfect for 2-step recipes: 1. Browning meat or grilling/sautéing vegetables 2. Mixing with other ingredients • Proof box for bread dough • Easy to clean Deck Ovens • Ovens used for roasting, baking, reheating, holding & “ovenizing” food • Metal lining • Two openings: 1. Shorter height (9”), smaller opening for pizza, etc… 2.
