Organic Chemistry II UC-Berkeley Extension, Fall 2011 Week 11: Carbohydrates: Monosaccharides, glyceraldehyde, Fischer projections, D- & L-monosaccharides, amino sugars, cyclic hemiacetals, Haworth projections, anomers, glycosides, alditols, aldonic acids, uronic acids, disaccharides, polysaccharides: starch, glycogen, cellulose. Objectives: • Draw the structure of D-glyceraldehyde, including stereochemistry. • Use Fischer projections to describe the stereochemistry of a chiral center. • Identify the stereochemistry of D- and L- glyceraldehyde (R or S). • Identify D-monosaccharides and L-monosaccharides and explain how they relate to D-glyceraldehyde and L-glyceraldehyde. • Use Fischer projections to describe the stereochemistry of an open-chain monosaccharide. • Identify the differences between a normal sugar and an aminosugar. • Show how open-chain monosaccharides can form cyclic hemiacetals and identify the anomeric carbon.
