Level of expertise Through rigorous preparation, the Le Cirque staff members are well-equipped to handle every guest’s needs. The secret to their success lies in their extensive training program, in which trainees attend sessions between the head chef and wine-waiter that enhance their overall knowledge of the many dishes and wines that Le Cirque has to offer. The intense and personal nature of these sessions allow servers to provide insightful and genuine suggestions to their customer questions and concerns. Le Cirque’s high expectations for its employees has created an intimate atmosphere with a satisfied clientele, giving this business a strong competitive edge. Service Staff Organization The service team is comprised of two general managers- Marco and Mauro Maccioni- assistant managers, servers, back waiters, and the front-of-house employees: hosts/hostesses and bartenders. A noteworthy policy, which further emphasizes the thoroughness of this facility, is that Le Cirque’s servers are trained to provide the full service cycle of seating tables, clearing table and taking orders. Scheduling High standards does not mean bitter bosses and unbearable hours. At Le Cirque, employees are allowed to choose their own schedules, and Marco appropriates a fair amount of flexibility in the scheduling in the case of an employee who, due to unforeseen circumstances, may not be able to make his/her shift. The schedules for assistant managers are updated monthly in accordance with the manager’s level of experience and expertise. For example, if the restaurant is hosting a major event during a particular month that is expected to bring high traffic, the schedule shift between assistant managers will reflect which, based on Marco’s assessment, are best capable of handling this particular period in the restaurant’s customer command. Uniforms The front-of-house staff must wear a standardized white dress-shirt, black apron, and a pair of slacks. Management are instructed to adorn a full suit. In order to convey its desired level of utmost professionalism, it is imperative that all staff members adhere to their dress code exactly, contributing to the tasteful ambiance to provide guests with a cultured experience superior to any other.
