Assignment 1 Questions 1. The areas in which I was lacking were Calories, Total Fat, Saturated Fat, Mono Fat, Poly Fat, Cholesterol, Carbohydrates, Dietary Fiber, Protein, Vitamin B12, Folate, Calcium, and Phosphorus. The foods that I could add to bring up my RDA in these categories are as follows: Calories – peanut butter, cheese, butter, and sour cream. Total Fat – desserts, salad dressing, pizza, hamburger. Saturated Fat – bacon, chicken, milk, and pork. Monounsaturated Fat – olive oil, avocados, and nuts. Polyunsaturated Fat – macadamia nuts, cheese, and butter. Cholesterol – eggs, cheese, chicken, and beef. Carbohydrates – Potatoes, corn, pasta, and bread. Dietary Fiber – beans, fruit, broccoli, and bread. Protein – beef, chicken, fish, and eggs. Vitamin B12 – salmon, fortified breakfast cereals, and beef. Folate – spinach, rice, peas, and broccoli. Calcium – Milk, cheese, yogurt, and ice cream. Phosphorus – dairy products, meat, and fish.
